Chicken Pasta Salad

As the weather warms up, one of the first changes we make is what’s for dinner. Comfortable evenings call for firing up the grill. And Jeremy is a fantastic “griller”! Lucky me!

I buy chicken or steaks or fish, and he works his magic with spices and seasonings and of course…Dale’s!

Along with the meat, I look forward to buying yummy fresh vegtables. Things we haven’t eaten all winter, like squash, zucchini, tomatoes, and even Vidalia onions. I wash and slice, and Jeremy throws a bit of flavor on them. They go on the grill too.

But it never fails that I have some left over. Too much to feel like I can throw it away, yet not enough to make another meal out of. What to do, what to do???

Full recipe can be found here. It’s so good and not bad for you either. Our South Beach diet would frown upon the pasta, but I am pleased to get my family eating raw veggies.
